This Weekend’s Must-Eat Food Pop-ups & Drops in NYC: May 1, 2026

Keeping up with NYC’s food pop-ups and limited dish drops is basically a full-time job. 8it does it for you. We track the most time-sensitive drops across the city (from chef residencies to one-day collabs to sidewalk pop-ups) and every Friday we hand-pick the ones we’re especially excited for. Here’s this weekend’s must-eats…

Dependent on who you are, May Day has a different meaning: a celebration of spring, an annual remembrance of JT’s “It’s Gonna Be Meaaay?”, or the workers – the immigrants – who built this city. For us, it’s the latter… although we might be guilty of the second. This weekend’s must-eats are a reminder that the coolest thing on any menu isn’t a technique or a trend, it’s a person with a history, a story and a recipe that they brought here. That’s something to celebrate.
