Keeping up with NYC’s food pop-ups and limited dish drops is basically a full-time job. 8it does it for you. We track the most time-sensitive drops across the city (from chef residencies to one-day collabs to sidewalk pop-ups) and every Friday we hand-pick the ones we’re especially excited for. Here’s this weekend’s must-eats…
Monday is 4/20, and if you’re participating, you likely expect to eat… too much. So rather than it coming out of left field, we recommend you get your reps in. This weekend, it’s about endurance – hit as many pop-ups, limited dish drops and collabs as possible – and you’ll be in a good place come Monday. Here are five to get you started…
M’Maht
Lise & Vito
126A Nassau Ave, BK
Sun 4.19 • 5pm till sell out

: instagram @mmaht
Chef Pauline Buth, winner of 2025 Best New Pop-up at the 8it Awards, has news… some would interpret it as wonderful and others will be heartbroken. This Sunday is going to be one of her last pop-ups for a while… because she’s joining the team at Bong! In her 8it award speech she said “I’LL NEVER STOP MAKING NOISE FOR CAMBODIA” and we know for a fact she’s gonna stick to that promise. So let’s go send her off, Num Pang Pâté in hand. Not familiar with M’Maht? Watch the M’Maht pop-up profile in our last post.
Gail Simmons × GERTIE

To do summer right, delicatessen, Gertie, launched a ‘Bagels with Buddies’ series, where they’re turning bagel and latke dreams into realities with their friends. The collab streak kicked off with Chef Gail Simmons and today’s the last day to get it. The sandwich? Montreal steak seasoning bagel, soft scrambled eggs, caramelized onions, green peppers, hot dog, and beef salami, cheddar cheese and spicy brown mustard.
Izakaya Night
Bufón
78 Rivington St, NYC
Sun 4.19 • 5-10pm

: instagram @dinafan
The culinary team from Demo launched a new restaurant in the Lower East Side, and we’re here for anything they do. The menu at Bufón typically serves up classic European-inspired cuisine, while also drawing on international techniques and ingredients. But this Sunday, Chef Dina Fan is serving a special Izakaya menu alongside a selection of sake from Zev Rovine Selections. There aren’t many spots left, so grab yours.
Mango Sticky Rice Sundae
Caffè Panna
Manhattan & Brooklyn Locations
Thru Sun 4.19
: instagram @laab.bar
Caffè Panna is collaborating with Laab Bar, Kru’s pop-up series built around Thai street drinking food. They’re dropping a Mango Sticky Rice Sundae available through Sunday. Mango ice cream with coconut caramel, mango coulis, toasted coconut, panna, topped with Laab Bar’s coconut sticky rice arancini. Sticky rice arancini on ice cream is not something we knew we needed. It is now.
EGODEATH
With Others
340 Bedford Ave, BK
Thru Sun 4.12 • 5pm-midnight

: instagram @egodeathnyc
EGODEATH is a pop-up that serves up zero waste feasts rooted in a minimal, brutalist style of cooking. This weekend’s resident chef has served his time in some of your favorite spots like Four Horsemen, Bridges and Estela. Through Sunday, you can get Chef Shom Mazumder-Colley’s menu that’s sourced straight from the Union Square Greenmarket, with a daily nigiri special and dishes like crab stuffed perilla, beef tartare and more.
This is just a taste of what’s poppin’ in the 8it app. If you have any suggestions to make the 8it app experience even better than it already is, don’t hesitate to shoot us a DM.
