This weekend, collabs split in two directions: flavors you already trust and ones you didn’t know you needed. On one side, the no-brainer hits like cacio e pepe folded into bread. On the other, chefs pushing cultures into each other in ways that you likely haven’t tried before, like a pancake turned sundae and Persian pizza. Which way are you going… comfort or (measured) chaos – both?

Ciao, Gloria hosts pastry chef Frank Carrieri for a one-day collab menu of polished classics. The lineup includes a caramel-hazelnut crunch bar with gianduja and lime streusel, a strawberry pie finished with crème fraîche chantilly, plus a banoffee choux layered with salted toffee chantilly, graham praline, and banana compote. Mavis-Jay Sanders × Ursula
📍Urusla
🏠 387A Nostrand Ave, BK
🗓️ Sun 3.22
: instagram @ursula_brooklyn
James Beard buddies, Chef Mavis-Jay Sanders and Eric See are dropping their take on a Carolina Gold as Ursula’s fourth burrito collab of the series. Mavis-Jay’s southern roots are on display: smoked pork shoulder, pickled jalapeño, slaw, pork rinds, crispy grits, soft scramble, all tied together with Carolina Gold sauce. It comes with a deviled egg on the side, because that’s true southern hospitality, and a portion of proceeds goes to Border Kindness, which makes this one hit beyond the plate.
Cacio e Pepe Twist
📍Birdee
🏠 316 Kent Ave, BK
🗓️ Thru Sun 3.22
: instagram @birdeenyc
At Birdee, cacio e pepe gets reworked into a laminated twist with pecorino cream and black pepper. It’s as direct as it sounds and hits the way it should: a classic done in pastry form.
Phoenicia Diner × Caffé Panna
📍Caffé Panna
🏠 Both locations
🗓️ Thru Sun 3.22

: instagram @caffepanna
We’ve all had breakfast for dinner, but breakfast for dessert? Caffè Panna is making magic happen with Phoenicia Diner this weekend. Pancake-infused ice cream gets topped with saucy berries, maple panna, graham crunch, and an actual pancake.
